■How to serve: [How to make broth] (1)Take 20g of kombu and wipe the surface with a cloth. Put it in 1L of water and put it over medium heat. (2)When the water comes to boil, add 30g of bonito flakes and turn off the heat. (3)Remove the foam. When the bonito flakes sink, strain the broth through kitchen paper.
■Precautions: *Reason why the kombu should not be washed: when kombu kale dries, the nutrition and umami comes out to form crystals. Rinsing it with water will wash all this umami away, so it is better to simply wipe it with a moist cloth.
■Storing: Store in a cool dry place, avoiding extreme heat and humidity
